Awesome Avacados

Have you got your guacamole on today?

mm, I enjoy a perfectly ripe, smooth and creamy avocado whenever I get the chance. Their creamy texture is delicious as is, mixed with chocolate, as a vegan pudding, spread on sandwiches and mixed in salads to name a few.

Benefits? 

Avocados have 54% of your recommended daily value of fiber along with vitamins A, C, E, K, B6 and also riboflavin, beta carotene, niacin, folate, pantothenic acid, potassium and many different antioxidants. Because of this, they help protect against cancer, heart disease, diabetes,  cholesterol and inflammation. Avocados can also help reduce the signs of aging, regulate blood sugar and promote eye health.

Fat is another benefit of avocados. Avocados are indeed high in fat, but they're high in monounsaturated fat, the good fat, that may actually help lower blood cholesterol levels.

 

 

Vegan, sugar free, Avocado Pudding

  • 2 small avocados or 1 large
  • 1 tablespoon cacao
  • 1 tablespoon (or to taste) of maple syrup, brown rice syrup, honey or agave nectar. It is best to add no more than 1 to 2 teaspoons of sweetener before you mix the pudding. It will turn out much creamier this way. Extra sweetener can be mixed in by hand before eating if desired.

Peel Avocado, blend all together in processor or mash with fork. Enjoy!
