Homemade Ravioli (Vegan)

I love ravioli and pasta. When I went vegan, giving up cheesy pasta and noodles was really hard. Then I discovered homemade ravioli! And wa-la! I can make them healthy, vegan, gluten free, you name it. I'm sharing my squash ravioli recipe with you today so you can make these tasty tidbits too. Warning: They are addicting and delicious!

You will need mini wonton wrappers, available in the produce section of a grocery store. You will need to make these yourself if you want them gluten free, or use rice wraps.
Filling:
Winter butternut squash, steamed in a skillet with garlic, onion and spices of your choice.
Scallions
Sprinkle of nutritional yeast (or parmesan cheese or rawmesan cheese from my raw lasagna)
Handful of fresh cilantro
Mix it all together in a mixing bowl. Stuff in your wonton wrappers. Have fun making ravioli shapes!

Wrappers stuffed with filling and ready to lightly fry in coconut oil. Then served with warm pasta sauce (also amazing eaten plain or with any sauce of your choice).

All that was left after making almost 30 ravioli! They were absolutely divine.
