Salad? ... Just add a little chocolate

I love greens and sometimes even crave them. However, I've noticed that's not the case for a lot of people, especially kids who wrinkle their nose at anything green.

Here's a fun way to add some spunk to your salad... add a little chocolate! No really, I'm serious. I think this combination tastes delicious and luckily so has everyone I've served it too so far. No one is ever able to tell greens are even added!

Green & Black Chocolate Balls

1 cup organic dates or raisins
3 tbsp organic cacao powder
½ to ¾ cup almond butter or peanut butter
1/2 to 3/4 cup finely chopped greens
1/2 cup seeds  

Place ingredients in food processor. Blend until creamy like fudge...taste test to see if you need more cacao or other ingredients. If you don't have a food processor, soak your dried fruit prior to using it, then mash everything together in a large bowl. 

Spoon out the “batter” and roll into small balls. Experiment with rolling the balls in coconut, cacao powder or poppy seeds. Indulge and devour.
