Raw (and Deliciously Divine) Lasagna!

I made this recipe for the Nutrition Cooking Class I taught at Ringling College and it was delicious! It was easy, tasty and quite filling. Plus, I felt wonderfully light after eating it, unlike how heavy and tired I feel after eating regular lasagna.

Rawzhanya (raw lasagna) Recipe

 Pasta
8 medium zuchinni or yellow squash (slicked long and thin, like a lasagna noodle)
½ cup cold pressed olive oil
1 tsp fresh oregano
1 tsp fresh basil
½ cup lemon juice
sea salt to taste
To prepare:
Mix all ingredients together, taking care not to break the “noodles”. Let it marinade together while preparing the rest of the ingredients.

 Rawcotta Cheese
1 medium lemon, peeled and quartered
3 medium cloves of garlic
3 tblsp chopped fresh oregano
¼ yellow onion
3 tblsp cold pressed olive oil
1 tsp sea salt
½ cup water
½ cup soaked cashews
½ cup soaked pine nuts or other nut
To prepare:
Put all in blender, except nuts. Blend. Slowly add nuts and blend until consistency reaches that of ricotta cheese.

 Marinara Sauce
¼ chopped yellow onion
2-3 garlic cloves
1 ½ chopped tomato
1 ½ tsp fresh oregano
4 fresh basil leaves
½ tsp salt
1 tbsp cold pressed olive oil
To Prepare:
Put all the ingredients in a food processor and blend until it forms a chunky sauce. Scoop out half the sauce into a bowl and blend the remaining sauce until it is smooth. Combine both sauces in the bowl- creating a smooth, yet still chunky sauce.

To put the raw lasagna together...
Place a layer of pasta in a lasagna pan, top with a layer of rawcotta, then marinara. Repeat until you run out of ingredients. Top with marinara then (optional) drizzle on cheeze sauce and top with rawmesean cheese. The cheeze sauce and rawmesean aren't necessary, but they sure taste good! Once it's completed, either place in oven at 100 degrees to warm, or place in dehydrator for 45 minutes to warm.

Cheeze Sauce
1/8 chopped yellow onion
1 medium clove garlic
1/8 cup soaked sunflower seeds
¼ cup nutritional yeast
¼ cup wild miso paste
1 cup water
1 ½ tsp turmeric
½ cup pine nuts on sunflower seeds
To prepare:
Add all ingredients except dry nuts to a blender and blend. Slowly add dry nuts, add more water if needed to achieve the consistency of melted cheese sauce.

Rawmesean Cheeze
1 cup walnuts or other nut
1 tbsp sea salt
½ cup nutritional yeast
To prepare:
Mix all in food processor.
